Okay so, I must confess to be a bit fussy with the majority of typical antipasti meats, however I’ve always been a fan of Mortadella. It’s a bit like a mild garlic sausage.

I was told once by a Nona, the best Mortadella has pistachio nuts in it. It can be difficult to find pistachio nut Mortadella, so if you ever come across it in a deli, please try it. ๐Ÿ‘Œ

This open sandwich is a delicious light meal and only comes in at approximately 300 calories. Highly recommend it. ๐Ÿ˜˜


– 1 slice of bread toasted

– garlic paste to thinly cover bread

– 2 tsp of good extra virgin olive oil

– half a vine ripe tomato sliced and seasoned with salt and pepper

– two slices of Mortadella

– a drizzle of the best balsamic vinegar you can get


Spread garlic paste on toast, drizzle a tea spoon of oil. Cut in half, fold one slice of meat on one half and the other on the other slice. Arrange tomato onatop. Drizzle with rest of oil and vinegar. Presto! Buon appetito!
