Great way to use up celery. Lovely for this time of year when Autumn is just around the corner. Refreshing, tasty and light. 🥣

Some health benefits of celery:

1) loaded with antioxidants, such as vitamin C, beta carotene, and flavonoids.

2) reduces inflamation.

3) good for digestion.

4) rich in vitamins, minerals and with a low glycemic index.

5) neutralises acidic foods.

Ingrediants

Bunch of celery chopped

Big jug of stock, enough to cover all veg and then some.

4 cups of chopped leak

Cup of chopped onion

Half a cup single cream

Salt and pepper to taste (I like both white and black pepper in this soup)

Tbsn of garlic paste

Couple of sprigs of fresh thyme

Olive oil and good knob of butter

Method

Fry veg in a big pot with the oil and butter. Once golden stir in garlic. Add stock and thyme. Bring to boil and simmer on low for about an hour. Blend with hand blender (or wait till cool and blend in jug type). Stir in cream and season with salt and pepper. If want to make plant based, omit butter and add about a cup cashews before blending.

You can also add some toppings, such as parmesan, good cooked sausage or chopped nuts.
