Lovely quick pasta for lunch. Can be served warm in colder months and chilled as a salad in warmer months.

Ingredients

Two or three vine ripe tomatoes

3 tsp of green pesto

3 mini babybel cheese

Glug of good olive oil

Parmesan for sauce and garnish

Fresh basil leaves

Black and or Red pepper to taste

Method

Boil pasta as directed. Chop tomatoes and babybel. Once pasta is cooked, drain, leaving a touch of pasta water in pasta by not draining efficiently. Return pasta to pot. Add rest of ingrediants, leaving some parmesan and pepper to garnish. Stir on gentle heat until cheese melts. And your done. Finito!
